I’m sure you know already that eating leafy greens is really good for your health.
But don’t you get tired of eating the same old salads over and over?
I know I do.
I have the tendency to make salads a lot for lunch because it’s easy.
But I get so got bored eating the same thing every day. And when I get bored, the cravings for junk food always kick in. Can you relate?
To help you mix things up a bit, I’m sharing my Winter Kale Salad and Creamy Avocado Dressing Recipe. This is one of my favorite go-to lunches.
Instead of using your usual salad lettuce, this recipe calls for kale.
Kale (the main ingredient in this recipe) is considered one of the most nutrient-dense foods on the planet. It’s got vitamins A, K, B1, B2, B3, B6 and C. (Kale is actually considered one of the BEST sources of vitamin C. Just one cup of kale contains more vitamin C than a whole orange.) It has the minerals manganese, calcium, copper, potassium and magnesium. It also has the antioxidants, quercetin and kampferol, which help counteract oxidative damage from free radicals in the body.
Kale also contains chlorophyll, which helps purify your blood of toxins. When the blood is cleaner, it’s better equipped to protect the body and it also helps to carry oxygen around the body more efficiently, which leads to fresher, healthier looking skin. Who doesn’t want that? The bottom line is, kale is a really healthy vegetable to include in your diet.
This recipe is simple and easy to make, really filling and absolutely delicious!
Here’s what you need to make the salad:
- 2 bunches of kale. (There are different kinds of kale. My personal favorite to use in this recipe is the curly kale. But you can use whatever you like.)
- 2 tbsp of cold-pressed olive oil
- juice of one fresh lemon or 2 tbsp of lemon juice
- 1/3 cup chopped red onion
- 1-2 tablespoons of pumpkin seeds and sunflower seeds (to sprinkle on top of the salad)
- ground black pepper and Himalayan salt, to season to your liking
Here’s what you need to make the avocado dressing:
- 2 ripe avocados, halved and pit removed
- 2 tbsp of cold-pressed olive oil
- juice of one fresh lemon or 2 tbsp of lemon juice
- 1/2 tsp of Himalayan salt
